Sample Menus Boxing Day Dinner

Starters

Tropical fruit drenched in liqueur and served in a pineapple case (v)

King prawn and marinated seafood mousse deep-fried in filo pastry with hot and sour sauce

Home-made chicken and watercress broth served with a selection of fresh rolls

Cream of carrot and orange soup with fresh coriander with a selection of fresh rolls (v)

Salmon lightly poached with white wine and herbs served with home-made tomato chutney and seasonal leaves

Pasta quills with smokey bacon and peas in a cream and herb sauce

Greek salad with tomatoes, cucumber, olives, Feta cheese and herbs (v)

Orange, grapefruit or tomato fruit juice (v)

Intermediate

Skewered Thai green chicken nestled on a bed of stir-fried vegetables and beansprouts drizzled with a sweet chilli sauce

Champagne sorbet (v)

Main courses

Roast rack of lamb coated with a herb scented crust and served with a port wine and rosemary scented sauce

Sliced breast of duck served with a wild mushroom, herb and caramelised orange sauce

Lemon sole wrapped asparagus parcel moistened with white wine and presented with a dill cream and pink shrimp sauce

Farmhouse cheese and onion quiche (v)

Cauliflower florets deep-fried in a chilli batter with a green salad and minted cucumber and yoghurt dip (v)

Broccoli spears in a Cheddar cheese sauce and Honey roast parsnips

Piped creamed potato flavoured with pimentos and diced potatoes braised in stock with tomato, onions and chopped parsley

Sweets

Mulled wine cheese cake with crème Anglaise

Cassis Royale with a swirl of cream and seasonal berries

Pear with Tia Maria flavoured cream and chocolate ice-cream

Toffee ripple, mint choc chip, strawberry, chocolate or vanilla ice cream

Sage Derby and Edam cheese and biscuits
